Heat a small frying pan and gently toast the pine nuts until golden brown. Shake the occasionally to ensure they’re evenly browned and don’t let them get overdone (which can happen very quickly).
Once done, add the pine nuts, basil, Parmesan, olive oil and garlic to a food processor and process until smooth. Add seasoning to taste
Mix into cooked pasta and serve immediately with a side salad and warm crusty bread. Garnish with extra Parmesan cheese.
