Perfect Pesto

I love pesto.

I especially love making and eating my own, home-made pesto.

I love making it so much I thought it was time I shared my tried and tested recipe for ‘Perfect Pesto’!

This recipe is incredibly easy and, once you’ve tried it, you’ll never want to go for the shop-bought stuff again. Having said that, it is useful to have a jar of ready-made pesto in the store cupboard in case of unexpected supper guests or a lack of fresh ingredients but, once you’ve made your own, you’ll find it hard to settle for anything else.

I absolutely love the smell of the fresh ingredients when everything is sitting out and ready to go into the mixer and I love watching it turn bright green as the basil starts to break down. It takes literally 10 minutes to make and is ideal for a quick lunch or light evening meal.

Occasionally, if I’m feeling particularly Domestic Goddess-y, I use a large pestle and mortar to grind down the ingredients by hand but, if I’m starving and want to make it quickly, I just throw everything into my smoothie-maker or food processor – whichever happens to be closest at the time – zuzz it all up and et voila!! Perfect, fresh pesto – every time.

If you like you can make double the quantity and store some of it in a sealed container in the fridge for a few days to use with another dish.

Instructions
  1. Heat a small frying pan and gently toast the pine nuts until golden brown. Shake the occasionally to ensure they're evenly browned and don't let them get overdone (which can happen very quickly).
  2. Once done, add the pine nuts, basil, Parmesan, olive oil and garlic to a food processor and process until smooth. Add seasoning to taste

  3. Mix into cooked pasta and serve immediately with a side salad and warm crusty bread. Garnish with extra Parmesan cheese.
