Caramel Chocolate Brownies
These delicious and gooey chocolate brownies are perfect for when you need a little bit of a pick-me-up. They’re quick and easy to make and can be left plain without the caramel or you can add the caramel for a little bit extra ‘comfort’. They work well either way.

  1. Heat the oven to 180, (160 fan), gas mark 4.
  2. Grease and line a 24cm x 24cm baking tray and set aside.
  3. Half fill a pot with boiling water and sit a heat resistant bowl over the top of the pot making sure the bottom of the bowl does not touch the water. Place the pot over a low heat on the cooker and add the chocolate (broken into small pieces) and butter. Keep stirring gently as the chocolate and butter start to melt then once everything is completely melted and the mixture looks love and glossy, remove from the heat and allow to cool slightly.
  4. Next, add the sugar to the mixture and stir in followed by the eggs (stir in), the vanilla extract and finally the flour.
  5. Make sure it’s all nicely mixed together then pour the mixture into your greased and lined tin.
  6. Dollop on your caramel sauce and swirl it about so that it makes a pretty pattern. This is easier when the caramel has been heated or you’ve made your own from scratch.
  7. Place the tray of mixture in the oven and cook for about 25 minutes. When you take them out of the oven they should still be quite soft and gooey. That’s exactly how you want brownies to be. They’re quite different from cake.
  8. Finally, leave them to cool for as long as your willpower will let you. Actually, there’s nothing quite as delicious as a warm brownie so they don’t have to be completely cold.
