I’m all for healthy eating and I believe the diet that most of us eat nowadays is fairly healthy, especially compared to years ago when I was young. But I do also believe that ‘a little bit of what you fancy does you good‘ and so I’m not averse to a bit of indulgence every now and then. And the other day the thing that I fancied more than anything else in the world was…a chocolate brownie.
I used to make brownies years ago and, to be honest, I had forgotten all about them but something on TV had made me think about them again and I dug out my old recipe.
As I was gathering up the ingredients for the brownies I came across a tin of Carnation ‘Caramel’ at the back of my baking cupboard and I had a lightbulb moment! Why not add a layer of caramel to the top of the brownies and get caramel, chocolate brownies? (No-one said this was the healthy version 😳)
Now, here’s a little heads up. When I make them again I will do things slightly differently where the caramel is concerned.
Firstly, instead of just dolloping the cold caramel on to the top of the mix, I would heat it up a little so that it spreads more easily. As you can see in the photo, one of the brownies had no caramel. One of them has the tiniest little bit oozing out of the mix. And the third one – my one – has the most enormous dollop of soft, gooey caramel on top that you could ever wish for. There were 12 altogether and that was more or less the uniform pattern for the others too.
Secondly, I would probably just make my own caramel next time. That way I can get it exactly how I want it. Don’t get me wrong though. Carnation caramel is fab and has it’s place but I would have just like a bit more control over the consistency and setting.
These however were afterthoughts and, despite the inconsistency, they were completely fabulous and are incredibly easy to make.
