When I first thought about making a ‘tropical’ smoothie’ today, the sun was shining and we had beautiful blue skies however, now that I’ve finally found the time to make it, it’s dull and grey and a lot windier than it was earlier. I’m not easily put off though so I decided to go for it and it’s delicious. You can always bookmark the recipe and try it when the better weather arrives if but personally, I love a smoothie whatever the weather.
I picked up two different Yeo Valley Greek style organic yogurts (my current favourites) when I was out shopping earlier in the week. I got their ‘Greek Style Yeogurt with Ginger’ and their ‘Greek Style Yeogurt with Honey’. You can, of course, use whatever takes your fancy but the ginger with the pineapple appealed to me so that’s what I’m using. One of the coconut yogurts would be great with this too.
This really couldn’t be easier.
Mango and Pineapple Smoothie
- 1 medium sized ripe banana
- 2 heaped dessertspoons of Greek style yogurt with ginger
- 1 mango diced
- 200g approx of fresh pineapple chunks (add more to taste)
- 1/2 glass of crushed ice (optional)
Stick all the ingredients in a blender or smoothie maker and smoosh until… well… smooth.
And that’s it!
As with all my smoothie recipes, if you don’t like your smoothies too thick you can substitute coconut water or fruit juice for the yogurt.
